Potatoes with Fresh Dill
Ingredients
- 3 lbs red-skinned potatoes
- 5 tablespoons butter
- 2 tablespoons chopped fresh dill
Directions
Place the potatoes in large pot. Add enough cold water to cover. Bring to a boil; cook until potatoes are just tender, about 15 minutes. Drain and refrigerate overnight.
Melt the butter in a skillet over medium high heat.
Cut the potatoes in half, place them flesh side down into the skillet, and cook until they are a nice golden brown.
Season generously with salt and dill; toss to coat.
