Grilled Watermelon

Ingredients

  • 1/4 cup olive oil
  • 1/4 cup Thai basil leaves
  • 2 tablespoons honey
  • 30 seedless watermelon cubes (1-inch cubes)
  • 12 skewers - soak in water

Directions

    Place oil, Thai basil, and honey in a blender or food processor. Blend or process until basil is finely chopped. Salt to taste.

  2. Refrigerate for 15 minutes.

  3. Thread 3-4 watermelon cubes on each skewer.

  4. Brush with the marinade.

  5. Grill over medium heat 4 minutes on each side.

  6. Serve skewers drizzled with reserved marinade alongside shrimp or fish.
