Grilled Watermelon
Ingredients
- 1/4 cup olive oil
- 1/4 cup Thai basil leaves
- 2 tablespoons honey
- 30 seedless watermelon cubes (1-inch cubes)
- 12 skewers - soak in water
Directions

Place oil, Thai basil, and honey in a blender or food processor. Blend or process until basil is finely chopped. Salt to taste.
Refrigerate for 15 minutes.
Thread 3-4 watermelon cubes on each skewer.
Brush with the marinade.
Grill over medium heat 4 minutes on each side.
Serve skewers drizzled with reserved marinade alongside shrimp or fish.
