Corn and Pea Mashed Potatoes


  • 2 tablespoons olive oil
  • 3/4 cup peas
  • 1 cup fresh corn kernels
  • 4 minced garlic cloves
  • 1/2 cup milk (rice/almond milk will work)
  • 2 teaspoons of salt


  1. Prepare your preferred mashed potatoes (but do not add milk).

  2. Heat the oil in large skillet over medium-high heat.

  3. Add the peas, corn, and garlic. Cook until corn is soft, stirring often, about 4 minutes.

  4. Add the milk and bring to a boil; immediately remove from heat, cover, and let steep 10 minutes.

  5. Stir the mixture into the potatoes. Season with salt.
