Basil Mashed Potatoes
Ingredients
- Basil oil
- 1 1/2 cup fresh basil
- 1/2 cup plus 3 tablespoons olive oil
- 1/4 teaspoon salt
- Mashed potatoes
- 5 lb Yukon Gold potato
- 1 1/2 cups rice milk
- 1 stick (1/2 cup) unsalted butter
- 1 1/4 teaspoons salt
Directions
Place the basil with the oil and salt in a blender; puree until smooth. Pour the basil oil through a fine-mesh sieve, pressing on and discarding solids.
Peel and quarter the potatoes. Cover the potatoes with salted cold water in a heavy pot and simmer for 25 minutes.
While potatoes are simmering, bring the milk, butter, and salt, to a simmer until butter has melted.
Drain the potatoes in a colander and return to pot. Add the hot milk mixture and mash with a potato masher until almost smooth, and then stir in 4 tablespoons herb oil.
You can add chopped fresh basil for texture.
