Makes 6-8 or more if you add blueberries
Ingredients:
- 2 eggs
- 1/4 C coconut oil
- 4T melted butter
- 1/2 C sugar
- 2T vanilla (I use the kind without alcohol - Morton & Bassett Organic)
- 1/3 C vanilla whey protein (Show Me the Whey is the one I like)
- 1C flax meal
- 1/3 C unsweetened coconut flakes
- 2t baking powder
Mix and let rest several minutes
Bake at 350 for 12 minutes
