Serves 4
Ingredients:
- 2 med. apples, sliced
- 2 med. pears, sliced
- 1 med. stalk celery, sliced
- 1 tsp. minced orange zest
- 1 tbsp. honey (mix with 1 teaspoon of cool water)
- 1/4 tsp. salt (opt.)
- 1/4 tsp. ground cinnamon
- 1/4 tsp. ground nutmeg
- 1/2 cup cashews, toasted
- 4 portions of salad greens
Set salad greens aside. Microwave the honey and then mix with cool water. Toast the cashews on a baking sheet at 350 degrees for seven minutes.
Cut and mix all other ingredients together. Pour over the honey dressing and toss well. Serve on top your salad greens. Finish with the cashews.
