Serves 6
Ingredients:
1 1/2 pound ground beef (20% fat)
1/3 cup celery, grated
1/3 cup carrots, grated
1/3 cup panko bread crumbs, (or any bread crumbs)
1 large egg, beaten
2 garlic cloves
1/2 teaspoon black pepper (optional)
1/2 teaspoon turmeric (optional)
1/2 teaspoon cinnamon (optional)
1/2 teaspoon nutmeg
1/2 teaspoon kosher salt
1/2 tablespoon minced ginger
Preheat oven to 350.
Mix all ingredients in a bowl. Each meatball will be 2 tablespoons. Rool the mixture in your hands to form a meatball. Line a baking sheet with parchment paper, or a greased piece of aluminum foil. Place one inch apart and bake for 30 minutes.
