Ingredients:
- 2 tablespoons olive oil (can use up to 1/4 cup)
- 1 garlic clove, minced
- 2 cups of medium or long-grain white rice
- 3 cups of water (you can add flavor by using chicken stock instead, but with IC you must make your own stock., look on the website for recipes.)
- 1 tsp fresh basil
- 1 tbl fresh oregano
- 1 tsp ground cumin
- 1 teaspoon of salt
In a large skillet brown the rice in olive oil over medium/high heat, and add garlic. Cook the rice mixture, stirring frequently for about 4 minutes.
In a separate sauce pan bring water/stock to a simmer. Add basil, cumin, oregano, and salt. Add rice to broth. Bring to a simmer. Cover. Lower heat and cook 15-25 minutes. Turn off the heat and let sit for 5 minutes.
