Ingredients
- 8 chicken breasts
- 1 caramelized yellow onion (check my website for this recipe)
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp thyme
- 1 cup shredded mild cheddar cheese
Butterfly each breast. This means to cut each one in half and fold them open so they can be filled. Caramelize your onion and place equal portions inside each chicken breast. Sprinkle your spice mixture inside then close. You may do this the day before to save time.
Preheat Oven to 375 degrees
Now to cook add olive oil to a saute pan over medium high heat. Salt the stuffed chicken and sear until golden brown, about 5 minutes. Sear four at a time and place them on a cookie sheet. Place the cookie sheet in the oven for ten minutes. When the ten minutes is up, sprinkle cheddar cheese on each breast and bake for three more minutes. Enjoy!
