Guacamole with Pita Chips

Ingredients:

  • 5 ripe avocados
  • 2 tbl of lemon zest (just rub off the yellow layer of a lemon using the fine side of a cheese grater)
  • Mash the avocados and mix with the lemon zest. You can not use lemon juice with IC, so you must eat this guacamole within one hour or it will turn brown.

    Serve with Pita chips (buy pita bread, cut them in triangles and bake at 350 for ten minutes)
