Roasted Asparagus

Ingredients:

  • 1 each bundle of green or white asparagus
  • 1 Tbl lemon zest
  • ½ cup olive oil
  • 1 tsp kosher salt
  • Begin by creating the marinade. Simply place the olive oil, salt, and lemon zest in a plastic top sealed bag. Rinse the asparagus and marinate inside the bag for as little as 1 hour. You can marinade over night, this will intensify the flavor.

    Preheat your oven to 375 degrees

    On a baking sheet covered with aluminum foil place the asparagus. Make sure to arrange them evenly, and be sure not to over crowd them. Roast in the oven for 20-30 minutes.

    Serves 4

    I marinated the asparagus overnight and the flavor was awesome. Personally, I thought that 20-30 minutes of cook time was too much. They were roasted and brown, but slimey. I don’t do well with slimey asparagus. I will absolutely make this again, but will cut down the cook time to 15 minutes. Just my opinion! At that point they might still be a little crunchy and not as nicely browned, though… which would be disappointing. Again, the flavor was awesome.
