Ingredient List:
- 2 LB Ground Lamb (you can substitute beef)
- 1 Cup Fresh Parsley – chopped
- 1 tsp All Spice – ground
- 1 tsp Cumin – ground
- ½ CUP Carrots – chopped finely
- ½ CUP Celery – chopped finely
- ½ tsp Kosher Salt
- Olive Oil
- 16 each Wooden Skewers
Place the Oven on Broil and soak 16 wooden skewers.
Mix all the ingredients together very well. Wet your hands and make 2 ounce meatballs. You should yield 16.
Now stick the tip of one skewer into the middle of the lamb meatball. Press the lamb down and tight around each skewer. Let the skewers rest in the refrigerator for twenty minutes.
Finish by brushing each one with very little olive oil and broil for three minutes, then turn each one and broil for another three minutes.
