Did I make a mi-STAKE!

It doesn’t matter what cut of beef you purchase; Rib eye, Filet Mignon, or NY Strip. Grab your favorite and fire up the oven. That’s right! Save your propane and charcoal this baby is going to bake!

Turn your oven to 400 degrees and hold the seasoning. Place your beef in the oven and bake until the meat reaches your desired temperature. Follow this scale: 125 (rare), 135 (medium rare), 145 (medium), 150 (medium well), 150 + (never!) You can record the temperature using a meat thermometer.

When the meat reaches your desired temperature remove it from the oven and let sit. Heat a sauté pan on medium high heat and add 1 tablespoon of olive oil. Season your beef liberally and sear both sides for two minutes each. This technique will allow you to control the doneness of the meat as well as create the perfect crust.
