When using herbs, fresh is always best. You can grow herbs year round in many parts of the world, but in the places that may have severe weather, buying fresh herbs and storing them is a very good alternative.
When you buy your herbs at the store, always choose the herbs from the top. Don’t worry about all the hands that might have touched it, that’s why we rinse the herbs at home. Also in most cases, cooking the herbs at a high temperature will destroy anything that might be left by the many hands that touched them. Most herbs are green, so look for a uniform bright green color. Give it a smell, roll some of the herb between your fingers and smell how potent the herb is. The more herbal the better. You’re ready to purchase.
At home, rinse the herbs well under slow-flowing cold water. Wrap your herbs individually with paper towel that has been completely dampened. Be sure the entire herb is covered. Store your herbs in your refrigerator near the middle. Too low and they may get too cold and freeze, too high and they may wilt quickly.
Note: When cutting your herbs be sure to use a very sharp knife. This way you will avoid bruising the flesh, which causes the herb to brown.
