Steamed Green Beans with Toasted Almonds

Ingredients:

  • 1 lb fresh green beans
  • 1 cup blanched shaved almonds
  • 1 tablespoon lemon zest
  • 1 teaspoon whole butter

Preheat the oven to 400 degrees

Begin by snapping off the ends of each green bean. You also want to rinse and dry both the green beans and the almonds.

Begin boiling the six cups water. You may throw in the lemon zest at this point. The lemon zest will infuse the water and then vaporize, thus penetrating the green beans.

On a cookie sheet spread the almonds out evenly and then bake for 7 to 10 minutes. Keep a close watch on the almonds when they are in the oven, they burn rather quickly.

When the almonds are done you are ready to steam the green beans. If you don’t have a proper steaming pans you can use a normal sauce pan and a metal colander that fits the pan. When you steam anything make sure the food does not come in contact with the water.

Place the beans in the colander and then above the boiling water. Cover the colander for five minutes. Remove the beans toss in a bowl with butter and almonds. Salt and Pepper to taste.

    The lemon is still too much. I’ve done something similar, but with french green beans from a can. Rinsed well and steamed. Also delicioso.
