Seared Prime Rib Roast (Serves 8)

Serves 8 people

Ingredients:

  • 4 lbs Prime Rib Roast
  • 1/8 cup Kosher Salt
  • 1/8 cup *Black Pepper
  • ¼ cup Olive Oil

Preheat the oven to 325 degrees

Begin by rinsing the meat with cool water. Pat the meat until it is completely dry. Rub the meat liberally with the salt and pepper making sure every inch of the meat is seasoned.

In a large sauté pan heat the olive oil over medium-high heat. Now, when a little smoke starts to appear place the meat fat side down, this will be the first side of six that you will sear. Searing the meat will give it a tremendous crust and absolutely insure the juiciest meat!

Sear for three minutes each side until the entire rib roast is seared to perfection. This whole process should take no longer than 20 minutes. Place immediately into the oven for 1 hour and 20 minutes. Use a rack that fits into the sauté pan, or if you have a roasting pan with a rack this will work great. If you don’t have a rack no worries the flavor will still be exceptional.

When you remove the meat cover it with aluminum foil and let sit for ten minutes. Letting it sit will allow the juices to remain in the meat and not all over your cutting board. It also helps keep the meat tender.

When you serve the meat you can slice it thin, or the classic 1 inch cut!
