
Ingredients:
- 4 lbs fresh spinach
- 4 tablespoons whole butter
- 2 tablespoon minced garlic
- 4 teaspoons Kosher salt
- 2 teaspoon black pepper
- 1 teaspoon ground nutmeg
- 1 cup heavy cream
Begin by bring a pot of salted water to a boil. Boil the spinach for 1 minute; stir a few times to make sure all the spinach is wilted. Drain the spinach in a colander pressing firmly to extract as much water as possible.
In a medium sized sauté pan melt the butter for five minutes until it starts to brown. Add the garlic and spinach and sauté for 1 minute. Add the cream, salt and pepper, and nutmeg and let the cream reduce by half, about five minutes.
