Ingredients:
- Enough chicken for whoever is eating
- ¼ cup fresh parsley
- ¼ cup fresh rosemary
- ¼ cup fresh thyme
- 1 tbl Kosher salt
- 2 tbl olive oil
- New potatoes 6 oz/person
Begin by cleaning all the fat off the chicken. Now grab yourself your cast iron pan and a cookie sheet.
Now cut your new potatoes in quarters. Toss in a bowl with the rest of the olive oil and fresh chopped herbs.
Layer the potatoes evenly on the cookie sheet and bake at 425 degree for 20 minutes.
Bring the cast iron pan to heat over the medium high setting. Once temperature begins to smoke the pan add half of the olive oil. Then season the chicken very well with salt and add slowly to the heated pan. Let sauté until a nice golden brown crust forms on one side. Make sure you are searing the smooth side of the chicken breast.
You can now take your chicken and layer them on top of the potatoes and return to the oven for ten more minutes.
















What would the herb measurements be if I were to use dried herbs instead of the fresh?
Asha using fresh herbs will help IC in many ways. Parsley is actually packed with nutrients that will strengthen your bladder. Rosemary helps fight Alzheimer’s disease, and thyme…well thyme is great for your respiratory system. So using dried herbs will defiantly take away from these medicinal advantages. However if you must use dried herbs, use 1/8 of a cup of each. Good luck!

Jamie, fresh herbs should be stored wrapped in a damp paper towel. Place them in drawer labeled “crisper”. This drawer is usually the one that you store your lunch meat, or cheeses. Replace the paper towel every other day, and they should stay fresh for two weeks! Good luck!
